The inside of Burrata is the Stracciatella. This is a fibrous fresh cheese with cream. This is the best part: fine, hand-pulled mozzarella fibers, mixed with creamy cream! Stracciatella (not to be confused with the ice cream of the same name!) tastes delicious plain, but also fits perfectly in an in salad, toasted bread or on a pizza. Irresistibly delicious!
